Bakes and cakes..

I had a visit today from dear friends from the office which I've known for almost 10 years. It feels so good to see faces of those you've always keep close at heart. TQ ladies..lets do this again & TQ for the visit!! Being a stay home mom sometimes makes you feel a far from everyone..lucky, I have baking to do!!

Batik Cake with Chocolate topping

Well, you could never estimate the appetite of growing boys..one day, they ate almost everything, the next day they became so picky and got mummy all worried.

And lately my boys are asking for cakes, and more cakes and more sweet things. Though this definitely will boost up their energy level but, i guess..my bakes are way much better than those junkies and processed food..hikss..

On the way back from school yesterday evening, my eldest asked whether last night's muffin was still available..and of course, the adik-adik already munched them all. Frustrated and he quickly requested.."kita buat kek batik la malam ni ma.."

I know they'll eat and really enjoy my bakes..i instantly diverted our direction to Speedmart and bought what's needed for the Batik cake..

Just after dinner, Aizam took my recipe book and found the batik's recipe and took out all the ingredients. Huh, he knows the routine..ingredients, basins, my scale..

By 10pm, below was set and gone into those little tummies.. Sometimes i got so confused, even after full plate of rice, they are asking for munchies..




1 packet of Marie biscuit - I use Tiger brand of 320 g, broken to halves
125g butter and cut to cubes
100g beryls dark chocolate
1/2 cup of Milo
1/3 cup of hot water
3/4 cup of condensed milk (a bit more pun boleh)
1 tsp of vanilla essence

For chocolate topping
100gm milk chocolate
1 tbsp butter

Place all ingredient except the biscuits into a pot. With medium heat, stir until boiling and the mixture is slightly thickens. Turn off the heat and pour in the biscuit and mix well.

Lined with baking sheet an 8 inch square pan. Pour in the mixture and press real hard using a large spoon. (Note: You could arrange the biscuits nicely, but i sure have no time for that with 3 kids waiting impatiently..)

For topping, melt the chocolate and butter and pour on top of the cake before chilling.

Cut with knife dipped in hot water.


Both kids brought these to school this morning..
Go on try on this super easy batik cake..you'll be surprised on how delicious they are esp with those chocolate topping on top..!!

Vanilla & Banana Muffin with Chocolate Chips

My son have requested for 'something' for his KAFA friends for a long time. "Not much mummy, for 32 only", the phrase he kept on repeating.

Well, since, i am slowing down with orders this week, i quickly whisk away 2 muffins last night for Aizam to bring this morning.

Vanilla muffin with chocolate chips & banana with chocolate chips..



VANILLA CHOCOLATE CHIPS MUFFIN
sources: Izah Muffin

2 cups all-purpose flour
1/3 cup light-brown sugar
1/3 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter -- melted and cooled
2 eggs - beaten
1 teaspoon vanilla
1 package (12 oz) chocolate chips
1/2 cup walnuts or pecans -- chopped (i didnt use this)

Preheat oven to 175 degree C.

In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips and nuts.

Spoon batter into muffin cups; bake 15-20 minutes, or until a knife inserted in center of one muffin comes out clean. Remove muffin tin to wire rack; cool 5 minutes and remove from tins to finish cooling. 
BANANA CHOCOLATE MUFFINS

1 1/2 cawan tepung gandum*
1 camca teh baking powder*
1/3 camca teh garam halus*
1 camca teh soda bicarbionate (mat letak 3/4 camca teh)*(*disatukan dan diayak)
3 biji pisang emas, dilecek halus
1 camca besar mayonnaise (i didnt use this)
1 biji telur gred B
Beberapa titik esen pisang
1/3 cawan gula perang @ soft brown sugar (resipi asal guna 3/4 cawan gula halus)
1/3 cawan mentega cair (mat guna minyak canola)

Panaskan oven pada suhu 180C, dalam satu bekas, satukan telur, gula perang dan mayonnaise, kacau rata dengan whisk hingga sebati. Masukkan pisang, minyak canola, esen pisang. Kacau rata.

Masukkan tepung yang telah diayan bersama bahan2 yang bertanda (*), tadi, gaul pantas hingga sebati, jangan gaul lama2.

Sudukan ke dalam bekas muffin yang telah disediakan terlebih dahulu sebanyak 3/4 penuh. Bakar 25 minit atau hingga masak. Sejukkan atas jaringan sebelum dihidangkan...

The Best of Tish Boyle's Pound Cake

Owh, dear..school hols is ending in just another day.. that means no more late wakes up, whole day of TV and plays and none stop of eating for the boys.. and in just another day, the start of whining, complaints..etc.. will begins and mummy will just listen with zero emotions.. As i recalled my schooling days were just as much exciting with enjoyments..long hols means period of bored-ness.. I just hope the exposure they had do have positive influence for future benefits.. Huhh..it is really tricky to be a parents (well me..) and so proud how my parents had brought us all.. TQ mak & abah..

Enough of that, after so much of super delicious Thai's food during our recent trip there..back home, only simple and easy food are in the interest of everyone, including me.. Last night after done with the orders, I decided to try Tish Boyle's pound cake..the review from other bakers esp Kak Rima, were so tempting to have a go on this recipe..

And..yes, truly it was so moist, light, and a deliciously simple cake that you can just grab and munch at a go.. believe it or not, by the time this entry will be posted, there were only 1 small slices left with few crumbs... From Tish's photo..the cake must be left to have a homogeneous brown top..but my kids were pestering me to have a slice..so once it's done i quickly turned off the oven..

Here goes my pound cake version..I divided the batter to half and one in 7 inch square tin and another in 6 inch round tin.. I sprinkled dark chocolate chips for the square tin..indirect attraction for the kids..hehehe


 
The round cake..ermm my abah would really love this cake..when we were kids, the butter cake stock he bought from the sundry shop never stops, where he'll have it with tea or hot milo..yes..he's a cake person..

Makes 10 servings
Storage: in an airtight container at room temperature for up to a week or refrigerated for up to 2 weeks.

Cake:
2 cups sifted cake flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened (i use anchor)
1 1/4 cups granulated sugar
4 large eggs                                                                                                      
1 tablespoon finely grated lemon zest (i use orange zest)
1/3 cup heavy cream (i use Paul's)

Make the cake:
1. Position a rack in the center of the oven and preheat the oven to 325°F. Grease the bottom and sides loaf pan. Dust the pan with flour and set aside.
2. In a medium bowl, sift together the flour, baking powder, and salt. Whisk to combine well and set aside.
3. In the bowl of an electric mixer, using the paddle attachment, beat the butter at medium speed until very creamy, about 2 minutes. Gradually add the sugar and beat the mixture at medium-high speed until very light, about 4 minutes. Reduce the speed to low and add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl occasionally (the mixture should look curdled at this point). Beat in the citrus zest and vanilla extract. Add the flour mixture at low speed in three additions, alternating it with the heavy cream in two additions. Mix just until the flour is incorporated. Scrape the batter into the prepared pan and smooth the top.
4. Bake the cake for 60 to 70 minutes, until a cake tester inserted into the center of the cake comes out clean. 

I placed the round cake into a plastic container and they fit perfectly nice..and thought would be a great 'buah tangan' to anyone.. Interested..let me know, rm55 for 2 x 6 inch cakes, one for your mom and another for your mom-in-law..perfect!


 On top everything, here assortment of macarons from dark chocolate, salty caramel, creamy strawberry, peanut butter and vanilla custard. TQVM Azri/Kak Azah!

Simple Recipe of Pavlova with Vanilla Cream

Alhamdulillah..fresh, rejuvenated and yes, I will sure be going to Krabi again..again and again.. :)

I have received some request for my Pavlova recipe..and here i am share my no-so-professional knowledge to all.. The reason i am not posting any recipe here as I used to, was because I received negative feedback on the unsuccessful trials which i found uneasy with. Please be fair to me, try again..insyaallah it'll turn out good.. If you compare the recipe & method from many resources..they were almost the same.. do try, then you'll know where you went wrong..

Or, simply order from me..hehehehe, hassle free for you though...

My first reference of pavlova was from below magazine which i had long time ago.. and i also tried this recipe from Joy of Baking as well as Nigella's.. If you compare both, more or less it is the same amount of sugar and eggs white..

My essential tips in making a successful pavlova is THE CLEANLINESS OF YOUR UTENSILS.
- Very super clean of everything.
- I wiped everything with hot water + lemon juice prior usage.


My first source of making the pavlova..

Here is the recipe I used.

Ingredients:

4 large white eggs
1 cup castor sugar
1 teaspoon white vinegar
1/2 tablespoon cornstarch (corn flour)

500 ml whipping cream (yes..i really use this much..250ml doesnt really covers my 2-tier pavlova)
1 tbsp castor sugar
1 tsp vanilla essence

Method:
  1. Preheat the oven to 140 degrees Celsius. Trace an 8 inch baking pan onto the parchment paper. 
  2. Using a clean, dry mixing bowl and beaters, start whipping the egg whites until foamy with small bubbles.
  3. Mix together the sugar (a spoon at a time) to the whites in a slow, steady stream, beating constantly. Continue to whip until the egg whites are glossy and form stiff peaks. 
  4. Whip in the corn starch and vinegar. Scrape the mixture into the centre of the circle on the baking tray. Use a large spoon to spread the meringue to the perimeter of the circle, shaping it so the edge is about 4cm higher than the centre. 
  5. Bake at 120 degrees for 1hr 20 mins, or until firm and baked through. 
  6. Turn off the heat and let the meringue cool in the oven overnight.
  7. For the cream, whisk cream, sugar, vanilla until thick.

Keep the meringue in an air tight container (in the fridge) if not in use. Only set the cream and fruits before serving. 

I normally use 3 different type of fruits..strawberry/peaches Del Monte in can/ Zespri kiwis and yes.. these fruits were the main reason pavlova are costly...

My son inspired me ..

Last was the last baking night..I am taking a leave..hehehe until next week..plus there'll be no water supply within Selangor which will  also affect my housing area as well..therefore, i announce my self as CUTI :)

Chocolate cuppies in football theme..TQ Yatie.. Sad to say, some cuppies tumbled up during transportation by my hubby to Yatie. I am sorry.. but Yatie said still acceptable though ...



A total of 30 pieces of dark Chocolate macarons for CT via Yatie (this is a different Yatie from the above..)


Also did below for CT, moist chocolate cake with super bike theme.. CT requested for super bike of her hubby's for this cake. When i received the image from CT, automatically i remembered the same bike my son (Aizam) had in his garage.. (not the real one of course!! )..


I told Aizam on the cake request and he was more excited than me to imitate the bike using fondant..Aizam love super bike so much and the fan to all the super racer. When Marco Simoncelli died recently, he wasnt scared at all yet still in love with those fast engines.

Tadaaaaa..my version :) please dont laugh..i know it if far from perfect!!

And the last one..pavlova with vanilla cream as well as strawberry/kiwi/peach. The remaining fruits were under those strawberries and cream..

Moist Chocolate Cupcake in Barbie Theme

My emotional qoute for being too long in the kitchen probably.. " I am sincere in what i do, with my own faith and holding on to my own beliefs. I am just human and i do make mistakes and never afraid to admit them as those would be some learning curves for me to be a better baker. "..

Hope everyone had a good Sunday with family and friends, as i had..

It wasnt intended for me to update the blog today, as i thought of posting this pav together with next week's bakes..but, having unpublished of below pav in my photo folder..just made me uneasy to sleep tonight..hehehe..

Princess Aisya is 5!

Today I delivered these to a long no-see dear friend, Nani. Last I saw/met her was like...9 years back..or even longer..she used to be my classmate in secondary..and we went to the same matric center..and eventually to the same Uni..she is the petite & cute type and i am the giant like type..and if i stands next to her..u might say that i am something like 5 years older (or even if u dont say it, that's how i feel!!).. And when we met..i feel like the old times again..and cant believe we both have our own kids now..how u cant keep tract of time..they slides so fast!

A dear friend Yatie ordered chocolate brownies for her nephew's Aqiqah last week..and today, the family re-order for their own..thanx babe!!

Sicilian orange cake.. Owh how I drooled baking this delicious cake..the sweet smell of orange really knocked off my sleepiness last night.. I didnt use any coloring, but the orange color was bright and darn tempting. I lightly topped the cake with orange drizzle..
