MU & Mickey birthday cake!

Miraculously..2 posts in a week..weeeeheee..

These are my last bakes of this week and I am sorry no new orders, as I had to attend to something personal and urgent.

Super fudge chocolate brownie with chocolate ganache. Thank you dear Rita.




Chocolate and cheese brownie with walnuts and topped with chocolate ganache. Again, TQSM Rita.

And the last cake baked today was..

Rainbow cake with cream cheese for Arissa. Happy birthday dear girl..muaahhsss. TQ Azira!



The picture of the cake was taken before the 'melt-down'... As it was cream cheese, I took out bare cake from the fridge 3 hours before the pick up..after 30 minutes left out on the kitchen counter and thought the cake was ok (which what i usually do for cream cheese versus sugary items) ..i placed all the fondant cut off..took the photo and placed the cake in the box and left in an air-conditioned room.. Cleaned the kitchen..fed my kids..and just 10 minutes before Azira's hubby came, checked the cake...the fondant melted and slides on the cake sides........i was sweating, and did everything all over again..and erkkk..i dont have the picture of the post 'melt-down'..i'll show them if Azira permits.. :) probably due to very hot weather, made the cream cheese so wet and sweaty..

Macaron madness..

I again, did few trials to master the art of macaron last week. Because this little cuties are too lovely to gave in to. And here are some points jotted which i found the most crucial for a successful macaron. Cracked macarons are my main failure. After placing a tray in the oven, waiting for 5 mins the feet will rise, and almost right after this..you'll slowly see a hairline crack starts to perform. If this is the first batch, you'll know that the rest of the trays will surely have the same cracks.. To point to continue..you'll only get 2-3 random of good macs, the rest are best to be thrown away soonest possible..hahaha.. After long sighed..patience..so here what made my macarons cracked :

1. Too high of temperature during baking.
- Even a teeny bit of change could affect. So here is the ideal for my oven..hehehe..see the marking..


2. Humidity
- Sad to say, yes rainy day affects, drying the mac in front of the oven helps or lay them in the air-conditioned room
- Heated the oven longgg enough to ensure homogeneous heat distribution within the oven

3. The art of folding
- Dont over beat or it'll create air bubbles in the batter..pufff cracking..
- Using a rubber spatula, scrap, turn, scrap..softly
- After adding the colour / additional flavouring..i counted to 5 and stopped..hahaha..
- It is done when you lift and it drapes down slowly ribbon like..if it dropped too fast..it's over beat..puff possible crack..

Other points jotted for my future reference;
- Egg whites could already be used after 8 hours of ageing.
- Use a good blender to zapped the icing sugar and the ground almond for a superfine result.

And here we are..tadaaaaa.. hope the above helps who've been having the same cracking on their macarons..

Birthday Rainbow Tier cake

Last week was the fastest and most chaotic week, it went too fast and i cant even recall in detail all of the event..

I was in KK Sabah for last weekend visiting my father who've been residing there for almost 10 years now. He under-went a thyroid gland removal due to presence of cyst inside the thyroid gland. Hope Abah recovers. I hate to have those feelings when your close family is not in good health :(

Below are last week's bakes.

Red velvet cake with cream cheese. Lightning McQueen was in fondant. TQSM Dilla, all the way from Seremban. Glad meeting you dear, and hope your fever vanishes soon. Glad u loves the cake.


Rainbow cake with cream cheese for Kak Hajar. Kak Hajar requested the decoration to be sweet but pale. As she wanted to surprise her dear hubby on the colourful rainbow layers in the inside. TQSM Kak Hajar, and glad you loves the cake.


And I had a massive order from Ekah for her son's combo birthday party in pink, purple & blue theme.

Chocolate cheese brownies, packed in pink paper cups.


Cake tier in the requested colour theme. Bottom layer cake was a 10 inch rainbow cake which i whisked away 3 recipe for this. Top tier was chocolate cake, while 50 cuppies surrounded the bottom cake tier. The top and sides of the cake was left empty and to be placed with photos by Ekah herself.


Ekah also ordered 50 assorted macarons. And to my shame i baked 3 batches of macs the entire week and only could yield up to less than 30 macs. The rest were disasters and tolling pain on me..and literally wasted most of my precious time.. Was it due to the humidity from the rain? or less practice on this delicate macaron, as my last mac bake was weeks back? Oh..sorry ekah that was all i could do..

TQSM Ekah for the trust, but also sorry for any imperfections..but I was so glad that Ekah SMSed that everyone loves it :)

Before my non-stop Friday bake night started, I had this delicious Nasi Dagang cooked/delivered to me by Niza. TQSM dear!!!!!!!!!!

A barbie doll or a rugby ball?

Cake for the girl versus cake for the boys. No I dont have any preference, yet enjoyed making them both, very much!

A barbie doll cake from chocolate moist cake layered with ganache and covered with butter cream for a pretty Natalie who turned 4. TQSM Nancy for this order!





Chocolate moist and butter cake for Aiman who turned 11. TQ Yatie!! Aiman had just finished his rugby match and was still in his rugby attire, together with his mummy collecting the cake from me. His team/school won the third place! Way to go boy..

Day to day, I've been thanking everyone..friends, family, blog reader, everyone for trusting and supporting my cakes and such. Today, specifically..I'd like to thank my dear hubby for understanding/supporting my passion and hobby in baking..thank you darling :)

Nothing else matters..

The title 'Nothing else matters' isnt as serious as how Metallica would sung it. To me alone, 'nothing else matters' other than delicious cakes & satisfaction to my customer, which is the ultimate matter. Deliberately, Ringgit or how many cakes i made is not the goal.. I am glad on the positive feedback received.

And i'd like apologize to Ct for the wrong name, Rahim instaed to Hakim. Bad me!! I dont know why Rahim, because i did checked the name / age right before cutting the fondant. I dont even notice the miss-spelled, only after i received a message indicated as such. Probably lack of sleep was the cause of my mistake.. again sorry Ct!!




Here also made for Ct, the Batik cake with chocolate topping on top. Errkkk this is the best shot I managed to capture :)

Simply delicious New York Cheese Cake

Cheese cake is another big hit for us besides chocolate cake. And the kids have been pestering me for Secret Recipe's New York cheese cake since last week. As i had leftover of philly cheese from last week's RV order, I used them up for this delicious, decadent New York cheese cake.

I have kept this recipe for a long time and have used it since then..no matter how interesting other recipe are..i would always use this one and only recipe..I love the smooth and creamy taste..not too silky..the substantial cheese texture is what i love most..

Give it a try and tell me what u think!!

Ingredients:

For the cheese filling;
500g philly cheese at room temp
150ml sour cream
1 large egg
1 egg yolk
125gm castor sugar
1/2 tbsp flour
1 whole lemon zest
1 whole lemon juice
1tsp vanilla essense

For the base;
250gm digestive biscuit, blended
150gm unsalted butter

How to:

Grease 7 inch pan, i love a tall cheese cake as that's what a NY cheese cake should be..8 inch would be perfectly nice too. Pre-heat oven at 175 degree.

Melt butter, pour into biscuit and pressed onto the pan. Bake for 15 minutes and let cool.

In a bowl beat everything except the sour cream. Once smooth, add in the sour cream and beat till all were smooth.

Pour into the prepared pan with the base.

Bake for 20 minutes at 175 degree and continue for another 45 minutes at 150 degrees. Turn off the oven and leave the door ajar. Once cooled, place in the fridge over night.

Note: I didn't do any 'water bath' baking. Still perfect and no cracking.

My personal preference with the tall base around the edge..


Dallop with any topping you like..we love blueberry filling..nyummmmmyy..


Love having this once out of fridge..cheese-ice cream? Sinful!!


My 16mo shall point to the fridge asking for more..
