Meeting the odds..

Syukur as always, I managed to pull things through though I thought I might not. Hubby was away to Germany for the entire week last week, and like always..all the unexpected happened only while he was away. He was not in, meaning me sailing alone, with the kids on tow.

Below are the bakes I promised longed before knowing hubby had to leave for the week. I was running kitchen-room-kitchen at night as my baby was having those nasty cough. Grrrr!!

And like always, once hubby was back today..everything seems calm..,my baby was recuperating..the boys are content with Babah in the house..and as I told him everything from A to Z..I felt like I was spicing things up :(

Anyhow..thank you all!!!

Lemon Cheese Tart

Made this simple yet delicious lemon cheese tart on Sunday. I had 2 kg of cream cheese which will expire on  the 1st week of July. Fear that there'll be no order, I decided to use them all up. Made double batch of this lemon cheese tart..a tray for us and another for my neighbour.

Recipe was adapted from Kak Yani's blog HERE. Happy trying..!

For my neighbour, I added canned tangerine..

For us, just a dashed of shredded chocolates. My dear friend Ita and mom dropped by and served this..gone in a minute!

At last these were collected by my sister for her friend, pavlova with vanilla cream.

Made this red velvet cake with the remaining cream cheese for my sister for her 23rd birthday..wishes you the best in life sis!

Hehehe..i'll be going slow this week. Hubby is away..my energy level will depletes so fast than you can imagine..so i am laying low and slow..

Cheers!

Pavlova week!!

I called it a pavlova week last week, made pavlova for 4 nice people. Cutting the fruits were the best part as I love the sweet smell of strawberry as well as the peaches..and every time I set a pavlova for a customer. sure I'll be salivating..nyumss..

On the other hand..I am still improving on the small cracks in my pavlova..sigh**

Thank you Aida, as always :)

Thank you sir! (my ex-boss ordered for his wife's birthday)

Thank you Noreen!

Thank you Effa!

Another pavlova was supposed to be collected by someone today, had to spend a night in my fridge..hope tomorrow it'll still be ok!

Baked this sicilian orange cake for Nurain. Thank you!

Delicious Cream Cheese Pound Cake

Happy Monday dearies!

I received 2 emails yesterday asking for the recipe of the cream cheese pound cake I made last week. And why not, share it to everyone here. Not that I dont want to share every recipe I baked. Simply, time for me to spend in front of the lappy was too limited. Most recipes were hand written in my old jot book.. I just had no chance to really type it back here for everyone to share. My baby just could not see me working on PC/handphone or any other devices. He'd nag..nag..pull..push..and yes, please imagine that.

Lucky tonight is bake free night, therefore once my baby was asleep..here I go, happily blogging..surfing the net.

Source of original recipe HEREThank you Ju for a simple and super recipe, and here I copies the recipe from Ju's.

Ingredients;
- 195g all purpose flour {i used superfine flour}
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 150g unsalted butter, room temperature {I used SCS}
- 140g package cream cheese, room temperature {I used the great philly}
- 200g castor sugar {I used 190 gram}
- 3 large eggs, room temperature
- 1/2 tsp pure vanilla extract
- Zest of a lemon or orange {I used lemon}

1. Preheat oven to 175°C and place rack in center of oven. Butter and line an 8-inch round cake tin. {I used a 5inch x 9 inch glass dish}

2. In a large bowl, sift together the flour, baking powder, baking soda and salt.

3. In the bowl of your electric mixer, or with a hand mixer, beat the butter and cream cheese until smooth. Add the sugar, in three additions, beating well after each addition. Continue beating on medium-high speed until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Add the vanilla and lemon zest and beat until incorporated.

4. Add the flour mixture and mix just until incorporated. Pour the batter into the prepared pan and smooth the top. I sprinkled some chocolate chips just for fun. Baked for 50 mins or till cooked.

The glass dish I used, 5x9 inch. Was a present to me :)

I am so new to food-graphy,,please bear with me.

A great gift for anyone.

How do I treat my self after tired nights of baking....

 Indian mangos, seedless grapes, apricot and red plum..to keep me going for the next bakes..

Too hard to be true..

Delivering a cake was something I feared most. And, what I feared might happened ..had actually happened..leaving me so sad and frustrated. The similar cake was delivered to once to Putrajaya & Kajang, and Syukur it was perfect. But, a cake I delivered to a housing area just across my house..collapsed, leaving me speechless!

I was driving super-slow as it was heavily raining, where I hit a small bump. Instead of pressing the break paddle slowly, I hit it hard (shocked, as didint see the small bump)..and there a shout from my boy who sat with the cake at the back.. "Ma...stop, kek jatuh..". I emotion shattered..WORDLESS.

Lucky the top tier (chocolate moist) was still acceptable, and re-assembled for Aida. The ruin bottom tier was 6 layers rainbow cake. :(

Aida & Rizal..I SORRY for what happened! Again so SORRY to ruin, Darwisy's special day!

Cuppies with similar theme.

I leave the rest of the bakes here..let the picture speaks :)

The Cars, Barbie & Safari theme birthday cakes..

End of school holiday, means ends of my luxury of relaxations. No more late morning wakes, no more 'tapau' food, no more iron-free day. Therefore, before I start on my ironing, I'd better update on the bakes for last week or else it will just be more delays.

Soft cotton durian cake. Made this for my parents, who love this cake so much. They sent me 10 packets of fresh peeled durian from our kampung. Where I only needed 150 gram of those king of fruit. Had another 8 packets of durians in the freezer for bubur during Ramadhan.!!

More bakes..

Subhanallah..it was such a hot (blazing) weather for the past 3 days. One should always be indoor with extra plenty of fluids. Hope it rain soon!!!

I had to open our kitchen door wide open when baking at night or the kitchen would get too hot. And I even kept the fondant cut outs for the cakes in my room's empty drawer. Just fear it wont survive the heat in the kitchen.

Below are bakes for Monday and Tuesday..

Thank you so much Kak Marina!
